In this article I will share with you the recipes of three delicious soups. They are made from fresh vegetables. This means that they are rich in vitamins and minerals. Also, vegetable soups are a healthy way to ensure you are not hungry through the day. This recipes contain all the ingredients needed along with the quantities required. By using the recipes provided below you should have enough soup to divide it in portions and eat it during several meals. If you decide to use a vegetable soup diet, you should also consider drinking only still water and tea made from plants. Now let’s check the soup recipes!

Italian style soup
– One onion
– A parsley root
– Two peppers (a green one and a red one)
– 2 or 3 celeries
– 1 kg of tomatoes
– 2 spoons of olive oil
– Oregano
– 2 parsley leafs
The vegetables should be finely chopped and the tomatoes and the pepper shouldn’t have seeds. Then you should fry the vegetables in hot oil. After that add 2 liters of water and let them boil for 10-15 minutes. Just before the soup is ready, add the parsley leaves and spice it as required.

Hot Soup
– An onion
– One big carrot
– One pumpkin
– 120 grams of potatoes
– 4 cloves of garlic
– 2 tomatoes
– A few sweet basil
– 200 grams of tinned dried beans
– A spoon of olive oil
– 2 leafs of laurel
– Pepper.
You must carefully chop the vegetables. All ingredients, except pepper, dried beans, laurel and sweet basil are fried in hot oil. After that add the leave of laurel and 2 liters of water. Boil them 10 minutes and then add the sweet basil and dried beans. Let them cook for 5 minutes on a low heat and finally just spice it all up after your own taste.

Toscana Soup
– An onion
– One hot pepper
– 2 clave of garlic
– 300 g of cabbage
– One leek
– Two celery
– Two spoons of olive oil
– Rosemary, parsley, savory
– 200 g of dried beans (grains) from tin.
All the vegetables, including the cabbage, must be finely chopped. Fry all these ingredients in hot oil, add rosemary and savory and after that include 2 liters of water. Boil them 10 minutes, add the dried beans and parsley and let them cook for another 5 minutes. At the end spice it all up.
